Variety characteristics
The Picual olive is named after it’s shape – characterised by its a pointed tip (pico). Estimations are that 25% of the world’s olive oil production uses the Picual olive, with up to 50% of all the crops in Spain being the Picual variety. It is also known as Marteño because in the village of Martos in Jaén is very common.
The Picual is a medium to large-sized olive, weighing an average of 3.2 grams, and the olives come mainly from the south of Spain. The cultivation surface is over 645,000 hectares (1.6 million acres) primarily in Córdoba and Jaén (where Reinos de Taifas is based). Picual’s oil has extraordinarily high stability, and has one of the best yields of any olive, with a large amount of oil coming from each fruit.
